Cabbage and Potato fry

Stir fried cabbage and potato curry




INGREDIENTS-
preparation time-5 min
cooking time-10 min
serve -6
  • Cabbage-350 gms
  • Chopped potato- 2(medium)
  • Tomato-1
  • Garam msalaa-1/2 tsp
  • Chili flakes-1tsp
  • Mango powder(or lemon juice)-1 tsp
  • Turmeric-1/2tsp
  • Sugar-a pinch of
  • Salt-1 tsp
Tempering-
  • Mustard seeds-1/2 tsp
  • Cumin-1/4 tsp
  • Fenugreek -1/4 tsp
  • Fennel seeds-a pinch of
  • Asafoetida-1/2 tsp
  • Curry leaves-8
  • Green chilies-2
  • Oil-3tbsp
PROCEDURE-
  1. Shred cabbage and chop potato and tomato in small pieces.
  2. Heat oil in a pan ,add the tempering, when seeds start cracling add curry leaves and chopped green chilies.
  3. Add turmeric, chopped potato and cabbage.
  4. Stir fry for a minute ,add salt and cover and cook on slow flame.
  5. When  done, add all the spices and chopped tomato.
  6. Mix and cover and cook for a minute.
  7. Add fresh coriander and enjoy.
Serving suggestions-serve with chapati and rice ,or use as a stuffing for sandwiches
