Achari Bhindi /Spicy Okra

Stir fried okra tempered with Indian pickle spices


INGREDIENTS-
preparation time-10 min
cooking time -8 min

  • Okra-350 gms
  • Mustard Oil-3 tbls *
  • Chopped tomato-1
  • Green chilli-2
  • Mustard seeds-1/2 tsp
  • Fenugreek seeds-1/4 tsp
  • Cumin seeds-1/4 tsp
  • Fennel seeds-1/2 tsp
  • Nigella seeds(kalonji)-a pinch of
  • Salt-1 tsp
  • Chilli powder-1 tsp
  • Turmeric-1/2 tsp
  • Pickle masala-1 tbsp *
  • Lemon juice/ vinegar-1 tsp
PROCEDURE-
  1. Wash and wipe okra.chop both the ends and slit from the centre.
  2. Heat oil in a pan, add mustard, fenugreek,cumin, fennel and kalonji .
  3. When seeds start crackling add asafoetida.
  4. Add chopped tomato,green chilli and saute for few seconds
  5. Add turmeric, okra and salt  and mix and cover and cook for 2 minute.
  6. Now add pickle masala and chilli powder.
  7. Mix and cover and cook till done
  8. Now add lemon juice or vinegar ,mix and serve hot .
 Note-
1-If you don't have pickle masala then take out 1 tbls  masala from the jar of your favourite pickle and use :)
2-Substitute mustard oil with any cooking oil of your choice.

Serving suggestions-serve with rice,roti or as side dish
