Guvar Phali ki Subzi (Cluster Bean Stir Fry)

Stir fried Cluster bean curry with yoghurt and Indian spices



INGREDIENTS:-

cooking time 10 min
serve-4
  • Cluster beans-250 gm
  • Green chillies-4
  • Ajwain(carom seeds)-1 t.s
  • Asafoetida-1/4 t.s
  • Yoghurt-3 tbls
  • Chilli powder-1.5 t.s
  • Turmeric -1/2 t.s
  • Mango powder-1 t.s
  • Coriander powder-1.5 t.s
  • Sugar-a pinch of
  • Salt-1 t.s
  • Oil-2 tbls
PROCEDURE-
  1. Wash and destring the cluster beans and chop into medium size pieces.
  2. Pressure cook with 1 glass of water for 3 whistles.
  3. Open the cooker and drain the beans in a colander to drain off all the water,no need to press and squeeze the water from the beans.
  4. Take curd in a bowl and mix salt,sugar, chilli powder, coriander powder and mango powder.
  5. Heat oil in a pan,add asafoetida and ajwain ,fry till golden in colour 
  6. Add green chillies(chopped in big pieces) turmeric and boiled guvar phali, saute for 1 minute
  7. Add  the yoghurt mix, stir fry and let it cook on low heat for 2-3 minutes.keep stirring in between.
  8. Serve hot.
serving suggestions-serve as side dish with roti,daal aur rice
